Ingredients
 

  • 12 ounces blueberries
  • 1 tablespoon granulated or raw sugar
  • 1 tablespoon lemon juice optional
  • 1 tablespoon fresh mint leaves roughly chopped or torn, optional

Instructions

  • Add the blueberries, sugar, lemon juice, and mint to a small saucepan over medium heat.

  • Bring the mixture to a boil then reduce the heat to low but maintain a light simmer.
  • Simmer for 7-10 minutes, stirring frequently, until the fruit has softened and the liquid is nice and syrupy. Taste the compote and adjust with more sugar, if necessary. Sometimes, with berries that are not as sweet, we like to add a little extra sugar.
  • Let the compote cool for about 5 minutes, garnish with fresh mint leaves, serve, and enjoy!

Notes

  • Feel free to add some water to your compote if it's looking a little dry or even if you just prefer it that way!
