Easy and Delicious Weeknight Ground Chicken Tacos

These ground chicken tacos are a flavorful, weeknight-friendly meal that’s anything but boring. Ingredients
 

  • 1 pound ground chicken
  • 2 teaspoons kosher salt
  • 1 teaspoon cumin powder
  • ½ teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 teaspoon oregano
  • ½ teaspoon chipotle chili powder
  • ½ teaspoon crushed red pepper
  • ¼ cup cilantro roughly chopped
  • 1 tablespoon tomato paste can be replaced with salsa
  • cup chicken broth can be replaced with water
  • 2 tablespoons neutral oil
  • 2 teaspoons lemon juice

For Serving

  • pickled jalapeños
  • shredded cheese
  • any other taco fixings you prefer

Instructions

To Cook

  • Heat oil in a medium skillet or non-stick pan over medium-high heat.
    2 tablespoons neutral oil
  • Once the oil is heated, add the ground chicken, season with kosher salt, and break it apart with a wooden spoon as it cooks. Sauté for 2-3 minutes. Don't worry if the chicken is not fully cooked at this point.

  • Stir in the tomato paste and sauté for another 2-3 minutes. Add the remaining dried spices and chicken broth and mix thoroughly. Bring the mixture to a boil, reduce the heat to low, and simmer until about a tablespoon of liquid remains.

  • Remove the pan from the heat and stir in the cilantro and lemon juice. Taste for seasoning and adjust as necessary.

To Serve

  • Assemble your tacos with sour cream and guacamole on the bottom, followed by your ground chicken, pickled jalapeños, salsa, and shredded cheese. These are the fixings we prefer but feel free to use whatever you like!
