How do I make this Amatrician?

Building this sauce requires slow rendering of the pork to draw out maximum flavor before simmering the tomatoes.

  1. BOIL THE WATER: Bring a large pot of heavily salted water to a rolling boil over high heat.
  2. RENDER THE GUANCIALE: Place your diced guanciale into a cold skillet and place it over medium heat. Starting in a cold pan allows the fat to slowly melt without burning the meat. Cook, stirring occasionally, until the fat is completely rendered and the pork bits are golden and crispy.
  3. SET MEAT ASIDE: Use a slotted spoon to transfer the crispy guanciale to a small bowl or plate. Leave all of the rendered liquid fat in the skillet.
  4. SWEAT THE ONION: Add the finely diced yellow onion directly into the hot pork fat. Season with a pinch of kosher salt and black pepper. Cook for 3 to 4 minutes, stirring frequently, until the onions turn soft and translucent.
